Wild Cod with Fresh Tomatoes


So easy to cook and so high in protein, cod is a perfect compliment to seasonal tomatoes.

I picked up Wild Cod fillets at Costco the other day.  Very well priced for wild cod.  My husband fried it up in coconut oil seasoned with chipotle purée and maple syrup and then tossed a chopped tomato from the garden into the pan.  He served it with brown rice and a salad.  Very easy and very delicious!

Chipotle Purée

  • One can of Chipotle Peppers in Adobo sauce (found in ethnic section of grocery store).

Purée contents of can in blender.  Store in a mason jar in the fridge.  Use as a seasoning for fish, chicken, beef or pork, or add it to Greek yogurt for a spicy dipping sauce.

Wild Cod with Fresh Tomatoes 
  • Wild Caught Cod Fillets
  • Chipotle Purée
  • 2 teaspoons maple syrup
  • Fresh Tomatoes, chopped
  • Coconut Butter


Melt butter in a non stick pan on medium.  Add cod fillets to pan, add a few spoonfuls of chipotle purée (depending on how spicy you like it) and the maple syrup. Cook a few minutes on each side until you see it flaking.  Add chopped tomatoes and heat through.   

Serve with a small side of brown rice, vegetables and a salad.
