1/4 c slivered almonds
1/4 c sunflower seeds
1 tbs flaxseeds
1 tbs sesame seeds
1 c unsweetened whole-grain puffed cereal (e.g. Nature’s Path millet or rice puffs)
1 c dried fruits (blueberries, cranberries, cherries, raisins, etc.)
1/4 c almond butter
1/4 c honey
1/2 tsp vanilla extract
1/8 tsp salt
Preheat oven to 350°F. Coat an 8-inch-square pan with coconut or grapeseed oil. Spread oats, nuts, and seeds on a baking sheet. Bake for 10 minutes or until the oats are lightly toasted and the nuts are fragrant, stirring about halfway through. Transfer to a large bowl. Add cereal and dried fruit and toss to combine. Meanwhile, in a small saucepan at medium heat, add almond butter, honey, vanilla, and salt. Stir frequently until combined. Pour the warm almond butter mixture over the dry ingredients and mix. Transfer to baking pan. Press the mixture down firmly to make an even layer. Refrigerate until firm, about 30 minutes. Cut into 8 bars. Try with your favourite variation of nuts and seeds.
