Measure out the quinoa then rinse under water. Bring quinoa and water to boil and reduce to medium-low heat. Simmer covered for 15 to 20 minutes or until most of the liquid is absorbed. Turn off heat, and let stand covered 5 minutes. Makes 2 to 3 cups quinoa. Add herbs and spices to use it as a side dish or simply add it to a soup or salad.
Indian Quinoa Pilaf
1 c cooked quinoa
3 tbsp coconut oil
2 tsp cumin seeds
1 medium size potato or sweet potato, diced
1 large carrot, diced
1 c cauliflower florets, chopped
1 c fresh or frozen green peas
2 tsp to 1 tbsp chili, thinnly chopped
1 tbsp fresh ginger, minced
Salt to taste

Heat oil in a wok or large saucepan on medium-high or high. Add 1 tsp of the cumin seeds and let them brown. Add potatoes, carrots, and cauliflower. Once the potatoes are almost soft and the cauliflower starts to brown, add peas, chili, and ginger and sauté about 5 minutes. Add bay leaves, cinnamon, cloves, and remaining cumin seeds. Sauté another few minutes. Add quinoa and salt to taste. Once warmed, add turmeric and lemon. Serve garnished with tomato and cilantro. Serves 2.
Quinoa Tabouli
1 cup quinoa
1 1/3 c water
2 bunches of parsley
½ cucumber, chopped
1 c cherry tomatoes, halved or ½ c chopped sundried tomatoes
¼ to ½ c green onion, chopped
¼ c fresh mint, chopped
¼ c fresh squeezed lemon juice
¼ c olive oil
Cook quinoa according to directions above. Let cool. Mix all vegetables and herbs together. Seperately, mix together lemon juice and olive oil to make dressing. Add vegetables and dressing to quinoa and stir.
